How to Get More Veggies in Your Diet When You Don’t Like them

 

 

We have all been told to eat our veggies. They are healthy and filled with fiber to keep us full, which is why they are a staple in every weight loss diet. However, most people do not like to eat an overabundance of veggies and many are strictly meat and potatoes people. So, how can you get more veggies in your diet if you are not a veggie person? You can get creative!

 
I am not a huge veggie person especially when it comes to cooked vegetables. This is one of my biggest diet downfalls, and why I have had to get creative.
 

Let’s first talk about the cauliflower revolution that we are currently experiencing. Every menu has some type of cauliflower, cauliflower steak, cauliflower rice, roasted cauliflower. I am not a big cauliflower rice person, but many people really like it. I have found ways to make it easier to eat. Please see some of the ways I have gotten creative with my veggies to get them into my diet. I hope these help you as much as they have helped me.

 

Check out these great ways to use cauliflower:

 

Cauliflower Rice Taco Bowls – Taco meat, cheese, salsa, tomatoes, onions, lettuce, avocado

 

Cauliflower Bread – Caulithins are really good. I make grilled cheese, meatball sandwiches, hamburgers on this bread

 

Cauliflower Potato Salad – Use your favorite potato salad recipe and substitute cauliflower. I promise you won’t miss the potatoes. One tip – Do not cook the cauliflower too long or it will get mushy and fall apart

 

Cauliflower Hash browns – These can be found at Trader Joe’s and Sprouts and they are really good

Check out these great ways to use Zucchini:

 

Zucchini Lasagna – Use a peeler to make thin slices of Zucchini and then layer: 1. Ground Beef or Turkey 2. Your favorite pasta sauce 3. Ricotta 4. Shredded Mozzarella 5. Use the thin strips of zucchini on top to separate the layers in place of the lasagna noodles. Your top layer should be cheese. Bake about 30 minutes on 350 degrees or until cheese is melted and bubbly.

(this is delicious and you will not know that you are eating Zucchini)

 

Zoodles – You can buy these in the store frozen or get a cheap spiralizer and make your own. You can user these in place of noodles in your favorite noodle dishes. Make sure you drain the water after you cook these, or your dishes will be watery. (these do not taste like noodles, but they do make yummy dishes)

 

Zucchini taco shells – These are a great substitute for soft tacos and pretty delicious. My favorite recipe comes from the food network – https://www.foodnetwork.com/recipes/nikki-dinki/zucchini-taco-shells-with-beef-and-zucchini-tomato-salsa-3414222

 

Breaded Zucchini – slice the zucchini, dip in an egg wash, dip in a mixture of breadcrumbs and Parmesan cheese and air fry or bake until crispy.

 

Spaghetti Squash is another great option – You can make Alfredo, Spaghetti with tomato sauce or meat sauce, you can mix chicken, feta and Tzatziki

 

Fried Potatoes

There are many substitutes these days for french fries and tater tots, and no, sweet potato fries don’t count as a vegetable!

 

Tater Tots – Green Giant has good broccoli and cheese tots as well as cauliflower tots

 

Turnip Fries – Peel a turnip, cut into fries, season with salt, cumin, pepper, paprika and either air fry or put in oven until crispy

 
 

Variety is the spice of life, even when it comes to vegetables. Experiment with new vegetables. Try a new type of salad or dressing. Sneak some veggies into your morning smoothie or shake.
